  • 1 onion (diced)
  • 4 garlic cloves (minced)
  • 2 cups basmati rice
  • 1 cup water
  • 2 cups chicken or vegetable broth
  • 1 teaspoon turmeric
  • Salt to taste
  • 3 tablespoons parsley (chopped)
  • Zest of 1 lemon
  • 3-4 tablespoons lemon juice

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Sauté diced onion for 2 minutes until softened, then add minced garlic and cook for another 2 minutes.
  2. Stir in turmeric and salt until well combined.
  3. Add the rice, stirring continuously until it turns mostly translucent.
  4. Pour in the broth and water, cover the pan, and bring it to a simmer before reducing the heat to low.
  5. Cook for about 12 minutes or until all liquid is absorbed.
  6. Remove from heat but keep covered for an additional 10 minutes to steam.
  7. Fluff the rice gently with a fork and mix in lemon zest, lemon juice, and chopped parsley before serving.
