  • 1 (3 ounce) lime jello
  • 1 cup shredded coconut
  • 1 teaspoon coconut extract
  • 1 (16 ounce) key lime frosting tub
  • 3 tablespoons green sprinkles
  • 1 cup toasted coconut for garnish
  • Zest of 2 limes

Instructions

  1. Preheat your oven to 350°F and prepare a mini bundt pan with non-stick spray.
  2. Mix the cake mixes according to package instructions.
  3. Divide the batter into two bowls: one with approximately 13-1/3 cups and the other with about 13-1/4 cups.
  4. In one bowl, mix in shredded coconut and coconut extract; add green sprinkles for fun. In the second bowl, stir in dry lime jello.
  5. Fill each bundt well with 1/3 cup of coconut batter followed by 1/4 cup of lime batter.
  6. Bake for about 22 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool for about 20 minutes before transferring to a wire rack.
  8. Microwave the frosting for about 30 seconds until runny, then drizzle over cooled cakes.
  9. Garnish with toasted coconut and fresh lime zest.
