  • 4 medium Yukon Gold potatoes, sliced
  • 1/2 large onion, sliced
  • 6 large garlic cloves, sliced
  • 3 large plum tomatoes, sliced
  • 2 medium carrots, thinly sliced diagonally
  • 1/4 cup olive oil
  • 1 tbsp harissa paste
  • 1 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/2 tsp ground turmeric
  • 1/2 cup vegetable broth
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. In a bowl, mix olive oil, harissa paste, coriander, cumin, ginger, turmeric, salt, and pepper.
  3. Toss potato slices in the spice mixture until coated.
  4. In a baking dish, layer half the onions, potatoes, garlic, tomatoes, and carrots. Season lightly.
  5. Repeat layers with remaining ingredients.
  6. Drizzle any leftover spice mixture over layers and pour vegetable broth around edges.
  7. Cover with aluminum foil and bake for 1½ hours until potatoes are tender.
  8. Let sit covered for an additional 10 minutes before garnishing with chopped cilantro.
