This eco-friendly strawberry syrup transforms leftover strawberry tops into a sweet, flavorful syrup with a beautiful fruity aroma. It’s a great way to reduce waste while creating a versatile topping perfect for drinks, pancakes, desserts, or yogurt.

 

Ingredients

For the Syrup:
6 cups strawberry tops (washed and cleaned)
4 cups sugar
4 cups water

Instructions

  • Rinse the strawberry tops thoroughly to remove any dirt or debris.
  • In a large saucepan, combine the strawberry tops and water.
  • Bring to a boil over medium-high heat, then reduce to a simmer and cook for 20–25 minutes, allowing the flavor to infuse into the water.
  • Strain the liquid through a fine-mesh sieve, pressing gently to extract as much liquid as possible. Discard the solids.
  • Return the strained liquid to the saucepan and add the sugar.
  • Heat over medium heat, stirring until the sugar fully dissolves.
  • Simmer for another 10–15 minutes until the syrup slightly thickens.
  • Remove from heat and let cool completely. The syrup will thicken further as it cools.
  • Transfer to a clean bottle or jar and refrigerate.
