  • 2 tablespoons olive oil
  • 6 strands saffron
  • 1 white onion (finely chopped)
  • 1 garlic clove (minced)
  • 1 teaspoon ground coriander
  • ½ teaspoon ground fennel
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground cardamom
  • ½ cup mixed dried fruits (apricots, raisins, cherries)
  • ¼ cup toasted almonds (chopped)
  • ¼ cup toasted pistachios (chopped)
  • Salt and pepper (to taste)

Instructions

  1. Steep saffron in boiling water for 10 minutes to infuse flavor.
  2. Rinse the Basmati rice under cold water until clear.
  3. In a medium saucepan, heat olive oil over medium-low heat and soften onions for about 5 minutes.
  4. Add minced garlic and spices; cook for another minute until fragrant.
  5. Stir in rinsed rice and coat well with the spice mixture.
  6. Pour in saffron water and additional water; season with salt and pepper.
  7. Bring to a boil, reduce heat, cover, and simmer for 15-18 minutes until absorbed.
  8. Turn off heat, layer dried fruits on top without stirring, cover again for 10 minutes.
  9. Fluff with fork, then mix in toasted nuts before serving warm.
