  • 1 cup orange juice
  • 1 tablespoon orange zest
  • ¼ cup ketchup
  • 2 tablespoons granulated sugar
  • 1½ tablespoons white vinegar
  • ½ tablespoon garlic (minced)
  • ½ teaspoon Chinese chili pepper flakes
  • ½ cup cornstarch
  • Cooking oil
  • ¼ cup water
  • ½ teaspoon Kosher salt
  • ½ teaspoon baking soda
  • 2 large eggs
  • 1 tablespoon oil (any neutral oil is fine)
  • 1 stalk green onion (thinly sliced, white and green parts separated)
  • Whole dry chili pepper (optional)

Instructions

  1. Marinate the chicken with water, baking soda, and salt in a large bowl until absorbed.
  2. Add eggs and cornstarch, mixing until well combined.
  3. Heat oil in a wok to 375°F.
  4. Prepare the sauce by mixing orange juice, zest, ketchup, sugar, vinegar, and cornstarch.
  5. Fry marinated chicken pieces in batches for about 4-5 minutes until golden brown.
  6. In a separate pan, sauté garlic and chili flakes before adding the sauce until bubbly.
  7. Toss fried chicken in the sauce to coat evenly and serve immediately.
