  • 1/4 cup extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • freshly ground black pepper (to taste)

Instructions

  1. Cook the orzo: Boil salted water in a large pot. Add orzo and cook until al dente according to package instructions. Drain and set aside.
