  • Large bag tortilla chips (13oz. bag)
  • 1 lb lean ground beef
  • 2 tablespoons taco seasoning
  • 1 can black beans, drained
  • 1 orange pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, sliced
  • From 2 ears of corn
  • 1 can black olives, sliced
  • 1 can green olives, sliced
  • Scallions, chopped
  • Jalapeños, thinly sliced
  • 2 cups Monterey Jack cheese
  • 2 cups cheddar cheese
  • 1 cup sour cream
  • Juice of 2 limes
  • 1 teaspoon kosher salt
  • Avocado, chopped
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix sour cream with lime juice and salt; refrigerate.
  3. Cook ground beef in a skillet until browned; stir in taco seasoning.
  4. In a springform pan lined with parchment paper, layer tortilla chips, beef mixture, diced veggies, and cheeses. Repeat.
  5. Bake for 30 minutes or until cheese is melted.
  6. Drizzle with lime sauce and top with avocado and cilantro before serving.
