  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium bananas)
  • Optional: 1/2 to 2/3 cups chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9″ x 5″ loaf pan.
  2. In a bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. Using an electric mixer, beat softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually add dry ingredients and alternate with sour cream until combined.
  5. Fold in mashed bananas and optional nuts.
  6. Pour batter into the prepared loaf pan and bake for 50 to 55 minutes until golden brown; check doneness with a toothpick.
  7. Allow to cool in the pan for about 10 minutes before transferring to a wire rack.
