  • 5 large eggs
  • 3 green onions
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1/2 teaspoon salt
  • 1 teaspoon cornstarch
  • 1/2 teaspoon white pepper
  • 1 tablespoon sugar
  • 2 tablespoons apple vinegar
  • 1 tablespoon fresh cilantro
  • Sesame seeds for sprinkling

Instructions

  1. Prepare day-old jasmine rice by breaking up clumps and letting it reach room temperature.
  2. Beat the eggs with salt and cornstarch until smooth.
  3. Heat a wok over high heat until smoking; add vegetable oil and pour in the beaten eggs. Scramble quickly and set aside.
  4. In the same wok, stir-fry minced garlic and ginger until fragrant.
  5. Add the rice to the wok, breaking up clumps while stir-frying for 2-3 minutes.
  6. Introduce diced carrots to the side of the wok, stir-frying them before mixing with rice. Add peas and corn afterwards.
  7. Drizzle soy sauce evenly over the mixture while tossing constantly until well combined.
  8. Return scrambled eggs to the wok, mixing in white pepper and sesame oil for flavor.
  9. Toss in chopped green onions before serving.
