  • 7 large tomatoes (crushed)
  • 1 onion (finely chopped)
  • 3 garlic cloves (thinly sliced)
  • 2 medium potatoes (diced)
  • ⅓ cup coarsely chopped cilantro
  • ½ teaspoon turmeric
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper
  • Vegetable oil
  • Unsalted butter

Instructions

  1. Heat vegetable oil in a pot over medium heat until shimmering.
  2. Sauté the finely chopped onion until golden brown.
  3. Stir in turmeric and cook for another minute.
  4. Add diced potatoes and sauté for about 5 minutes until slightly tender.
  5. Incorporate the crushed tomatoes, seasoning with salt and cayenne pepper.
  6. Gently mix in the washed Basmati rice and water; bring to a boil.
  7. Reduce heat and simmer until most liquid is absorbed, about 15 minutes.
  8. If needed, add more water and continue cooking until rice is tender.
  9. Steam covered with a towel for 10 minutes; fluff with a fork.
