  • 1 lb chicken breast (diced)
  • 2 tbsp olive or sesame oil
  • 2 garlic cloves (minced)
  • 1/2 cup soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice or apple cider vinegar
  • 1.5 cups cooked rice
  • 1 cup pineapple chunks
  • 1/2 red bell pepper (diced)
  • Chopped green onions for garnish

Instructions

  1. In a skillet, heat oil over medium heat and sauté the diced chicken until fully cooked. Set aside.
  2. In the same pan, sauté minced garlic until fragrant, then add soy sauce, pineapple juice, honey or brown sugar, and vinegar. Stir well.
  3. Mix cornstarch with water to create a slurry, then pour it into the pan to thicken the sauce.
  4. Add cooked chicken back into the pan along with pineapple chunks and diced bell pepper; stir to combine.
  5. Gently fold in cooked rice on low heat until warmed through.
  6. Garnish with chopped green onions before serving.
