  • 1 cup pineapple chunks, fresh or canned, well drained
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly grated ginger
  • Salt and black pepper, to taste
  • ¼ cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, add onion, garlic, and red bell pepper; sauté until softened.
  3. Stir in pineapple chunks and cook until heated through.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender.
  6. Return cooked chicken to the skillet; stir gently to combine and heat through.
