  • 4 cups cooked brown or white rice
  • 1 lb boneless, skinless chicken thighs
  • 3 tablespoons coconut oil
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 1 tablespoon honey
  • 1 1/2 cups fresh pineapple, cubed
  • 1/2 cup frozen peas
  • 2 tablespoons fresh lime juice
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • Salt, to taste

Instructions

  1. Prepare the chicken by lightly seasoning it with salt and letting it rest for 10–15 minutes. Pat dry before cooking.
  2. Heat 2 tablespoons of coconut oil in a wok or large skillet over medium heat. Cook the chicken for about 5–7 minutes until browned and fully cooked. Remove from the pan and set aside.
  3. In the same pan, add the remaining coconut oil and sauté the chopped onion for 3–4 minutes. Then add the bell peppers, minced garlic, and grated ginger, cooking for an additional 2–3 minutes.
  4. Deglaze the pan with soy sauce, then stir in the chilled rice, honey, cubed pineapple, and cooked chicken. Toss well to combine and reduce heat to low; cook for about 5 minutes while stirring occasionally.
  5. Add frozen peas and lime juice; gently stir to incorporate everything. Turn off heat as peas warm through.
  6. Serve immediately topped with chopped green onions and sesame seeds.
