  • ½ cup low sodium soy sauce
  • ½ cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons honey (or pure maple syrup)
  • 1 tablespoon rice vinegar
  • 1 ½ tablespoons cornstarch
  • 1 ½ pounds boneless skinless chicken breasts (cut into pieces)
  • 2 ½ tablespoons avocado oil or olive oil (divided)
  • salt and pepper
  • 1 small red onion (chopped into 1-inch pieces)
  • 1 red bell pepper (chopped into 1-inch pieces)
  • 4 cups broccoli florets
  • 20 ounces canned pineapple chunks in 100% juice (reserve the juice for the sauce)

  • chopped green onions (optional)

Instructions

  1. In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, honey, rice vinegar, and cornstarch until smooth.
  2. Heat oil in a large skillet over medium-high heat. Cook chicken pieces seasoned with salt and pepper until golden brown and cooked through (about 7-10 minutes). Transfer to a plate.
  3. In the same skillet, add more oil and sauté chopped onions, bell peppers, and broccoli for about 4 minutes until crisp-tender.
  4. Return chicken to the skillet along with pineapple chunks. Pour teriyaki sauce over everything and stir well; cook for another 1-2 minutes until thickened.
  5. Serve over cooked rice if desired and garnish with chopped green onions.
