  • 2 cans cream of chicken or mushroom soup
  • 1 cup water
  • 2 cups milk
  • 3 boneless skinless chicken breasts (or thighs)
  • 1½ cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish.
  2. In a mixing bowl, combine the rice, cream of chicken (or mushroom) soup, water, milk, and onion soup mix until well blended. Pour into the greased baking dish.
  3. Sprinkle half of the shredded cheese over the mixture. Nestle the chicken on top and season with salt and pepper.
  4. Cover tightly with foil and bake for 1.5 to 2 hours until the rice is tender and chicken is cooked through. Remove foil during the last 15 minutes.
  5. After baking, sprinkle remaining cheese on top and return to oven uncovered for an additional 5-10 minutes until melted.
  6. Allow to sit for 15-20 minutes before serving.
