  • ⅓ cup canned pumpkin
  • ¼ teaspoon cinnamon
  • ½ cup honey
  • ½ cup vanilla protein powder
  • 1 ½ cups rolled oats
  • Salt (to taste)
  • 1 ½ teaspoons pumpkin pie spice
  • ½ cup mini chocolate chips

Instructions

  1. In a mixing bowl, combine almond butter, pumpkin, cinnamon, honey, vanilla protein powder, rolled oats, salt, and pumpkin pie spice. Stir until well combined using a rubber spatula.
  2. Gently fold in mini chocolate chips until evenly distributed.
  3. Use a cookie scoop to form balls and place them on a baking sheet. Aim for about 26 protein balls.
  4. Chill in the refrigerator until firm to the touch. Store in a Ziploc bag in the fridge or freezer.
