- 4 slices cooked Turkey Bacon (chopped)
- 2 tablespoons Turkey Bacon grease (or butter)
- 1 medium onion (diced)
- ½ cup shredded carrot
- 1 clove garlic (minced)
- 2½ cups chicken broth
- 1 teaspoon brown sugar
- 1 bay leaf
- 2 sprigs fresh thyme (or ¼ teaspoon dried thyme)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon ground nutmeg
- 1 (15 ounce) can pumpkin puree
- ½ cup heavy whipping cream
- Cook the Turkey Bacon in a large soup pot over medium-high heat until crisp. Transfer to a paper towel-lined plate, leaving some fat in the pot.
- Sauté diced onion until softened, then add shredded carrot and minced garlic; cook until fragrant.
- Pour in chicken broth, brown sugar, bay leaf, thyme, salt, pepper, and nutmeg. Bring to a boil and simmer for 15 minutes.
- Stir in pumpkin puree and cream; simmer for an additional 2 to 3 minutes.
- Remove bay leaf and thyme stems, then blend until smooth using an immersion blender or standard blender.
- Garnish with parsley and croutons before serving.
