  • Salt and pepper to taste
  • Optional: 1 cup mozzarella cheese, shredded

Instructions

  1. In a saucepan, bring vegetable broth to a boil. Gradually whisk in polenta and stir continuously until thickened.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent, then add minced garlic and chopped spinach until wilted. Season with Italian herbs, salt, and pepper.
  3. In a greased baking dish, layer half the polenta mixture at the bottom. Spread the spinach mixture on top and add the remaining polenta. Optionally top with mozzarella cheese.
  4. Preheat your oven to 375°F (190°C) and bake for 25-30 minutes until golden brown.
