  • 2 large chicken breasts
  • 1/2 medium onion (chopped)
  • 1 (10 ounce) can Ro-tel diced tomatoes & green chilies (drained)
  • 1 (14 ounce) can black beans (drained & rinsed)
  • 1 (12 ounce) can corn (drained)
  • 1 cup Mexican cheese blend
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt & pepper (to taste)
  • Fresh cilantro (chopped (optional, to taste))

Instructions

  1. Preheat the oven to 400F.
  2. Cut chicken breasts in half lengthwise; season with garlic powder, chili powder, salt, and pepper.
  3. In a skillet over medium-high heat, add olive oil and sear chicken for 3–4 minutes per side until golden; remove from pan.
  4. Sauté chopped onions in the same skillet until softened.
  5. Stir in Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through.
  6. Return chicken to skillet, top with tomato-bean mixture and sprinkle with cheese.
  7. Bake for 5–7 minutes until chicken reaches 165F and cheese melts.
