  • 3 small cloves garlic
  • 10 mint leaves
  • 5 basil leaves
  • 1 heaping tablespoon capers
  • 2 tablespoons pine nuts or walnuts, lightly toasted
  • Red apple vinegar or white balsamic vinegar
  • Sea salt and freshly ground pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add half of the sliced zucchini and sauté until golden brown, about 15 minutes.
  2. While the zucchini cooks, finely chop garlic, mint leaves, basil leaves, and capers to form a coarse mixture.
  3. Remove the first batch of zucchini and repeat cooking with the remaining zucchini.
  4. Combine all cooked zucchini in the skillet with the herb mixture and vinegar; season with salt and pepper to taste.
  5. Serve topped with toasted pine nuts or walnuts.
