  • 1 lb boneless chicken breast
  • 2 cups mushrooms, halved
  • 1 clove garlic, minced
  • 3 sprigs fresh thyme
  • 1 1/2 cups dry white apple vinegar
  • 1/2 cup seasoned flour
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/3 cup shredded asiago cheese
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Pound chicken breasts between wax paper until about ¼ inch thick; cut into smaller pieces.
  2. Heat the butter and 1 tablespoon of olive oil in a heavy skillet over medium heat.
  3. Dredge each chicken piece in seasoned flour and sauté until golden brown, about 5 minutes per side. Remove from pan.
  4. Add remaining olive oil; sauté mushrooms and garlic until browned.
  5. Deglaze the pan with apple vinegar, adding bruised thyme sprigs.
  6. Return chicken to the pan; bring to a boil, then simmer covered for 15-20 minutes.
  7. Stir in heavy cream and asiago cheese; cook on low until melted and thickened.
  8. Return chicken to sauce before serving, garnishing with fresh thyme.
