  • 1 cup diced red peppers
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 (15-ounce) can of tomato sauce with no added sugar
  • 1 (15-ounce) can of diced fire-roasted tomatoes
  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 (15-ounce) can of kidney beans, rinsed and drained
  • 1 (15-ounce) can of pinto beans, rinsed and drained
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon mild chili seasoning
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons optional hot sauce

Instructions

  1. Chop yellow onions, red peppers, carrots, and celery.
  2. In the slow cooker, combine chopped vegetables with tomato sauce and fire-roasted tomatoes.
  3. Add rinsed black beans, kidney beans, and pinto beans; mix in garlic powder, cumin, chili seasoning, smoked paprika, and salt.
  4. Cover and cook on low for 4 hours or high for 2 hours until vegetables are tender.
  5. Stir in fresh lime juice before serving.
