  • 1 medium yellow onion, diced
  • 4 medium carrots, sliced into rounds or half moons
  • 4 stalks celery, sliced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 dried bay leaves
  • 1 teaspoon dried thyme
  • 2 large boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 ounces egg noodles
  • Juice of 1/2 lemon
  • 3 tablespoons fresh parsley, finely chopped

Instructions

  1. Dice the onion, slice the carrots and celery, and mince the garlic.
  2. Add all ingredients (except parsley, lemon juice, and noodles) to the slow cooker. Season with salt and pepper.
  3. Cook on low for 6-8 hours until chicken is fully cooked and veggies are tender.
  4. Remove chicken, shred it using two forks, then return it to the slow cooker along with the egg noodles.
  5. Cook on low for an additional 5-10 minutes until noodles are tender.
  6. Stir in lemon juice and parsley before serving.
