These soft and chewy mojito cookies are a fun twist on a classic treat, infused with refreshing hints of lime and mint. With a tender texture and bright citrus flavor, they’re perfect for a unique dessert that feels light, fresh, and slightly tropical.

 

Ingredients

1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
2 tablespoons milk
2 teaspoons vanilla extract (alcohol-free)
1/8 teaspoon spearmint extract (or to taste)
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Lime zest, for garnish (such as Key limes)
Fresh mint leaves, for garnish

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the egg, milk, vanilla extract, and spearmint extract, mixing until smooth.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  • Scoop tablespoon-sized portions of dough and place them onto the prepared baking sheet, spacing them apart.
  • Bake for 10–12 minutes, or until the edges are lightly golden and the centers remain soft.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack.
  • Garnish with lime zest and fresh mint leaves before serving.
