  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 can (20 ounces) crushed pineapple, drained
  • 1 cup chopped pecans
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt; mix well.
  3. Add softened butter, eggs, and vanilla extract to dry ingredients. Beat on medium speed for about 2 minutes until well combined.
  4. Gently fold in the drained crushed pineapple and chopped pecans until evenly distributed.
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring them to wire racks to cool completely.
  7. For the frosting, beat together softened cream cheese and butter in a mixing bowl. Gradually add powdered sugar and vanilla extract until smooth; adjust consistency with milk if necessary.
