Spicy Bayou Deviled Eggs are a delightful twist on a classic appetizer, combining creamy textures with zesty Cajun flavors.   • 12 hard-boiled eggs, peeled & halved lengthwise
  • 2 tbsp mayonnaise
  • 1 1/2 tbsp dill pickle relish
  • 2 tsp yellow mustard
  • 1-1 1/2 tsp Cajun seasoning
  • 2-3 dashes hot sauce
  • 1 1/2 cups flour
  • 2 large eggs, beaten
  • 2 cups Panko breadcrumbs
  • 2 1/2 tsp gumbo file powder
  • Salt & pepper, to taste

Instructions

  1. In a mixing bowl, scoop out the yolks from the hard-boiled eggs and place them in a separate bowl.
  2. Add mayonnaise, dill pickle relish, yellow mustard, Cajun seasoning, and hot sauce to the yolks.
  3. Use a whisk to mix until smooth and creamy.
  4. Spoon or pipe the yolk mixture back into each egg white half until filled generously.
  5. Set up three bowls: one with flour, one with beaten eggs, and one with Panko breadcrumbs mixed with gumbo file powder.
  6. If desired, dip each filled egg half first in flour, then in beaten eggs, followed by coating in Panko breadcrumbs.
  7. Heat oil in a frying pan over medium heat and fry each breaded egg half until golden brown.
  8. Arrange your Spicy Bayou Deviled Eggs on a platter and garnish with additional hot sauce if desired before serving.
