  • 2 tbsp gochujang
  • 1 tbsp gochugaru (or ½ tsp chili flakes)
  • ½ tbsp soy sauce
  • 1 tsp rice apple vinegar
  • ½ tbsp sugar
  • ½ tsp toasted sesame oil
  • ½ cup water
  • 2 packs enoki mushrooms
  • 1 clove garlic (minced)
  • 2 tbsp neutral oil (divided)

Instructions

  1. In a small bowl, combine gochujang, gochugaru, soy sauce, rice apple vinegar, sugar, toasted sesame oil, and water. Mix well and set aside.
  2. Trim the roots off the enoki mushrooms and rinse under cold water. Pat dry and break into smaller bundles.
  3. Heat 1 tablespoon of oil in a skillet over medium-high heat. Cook half of the mushrooms for 1-2 minutes on each side until golden brown. Remove and repeat with the remaining mushrooms.
  4. Add another tablespoon of oil to the skillet; sauté minced garlic for 30 seconds until fragrant. Pour in the sauce mixture and bring to a simmer.
  5. Return all cooked mushrooms to the skillet; cook uncovered for 3-4 minutes until evenly coated with sauce.
