170 g (6 oz / 1 1/2 sticks) butter, room temperature
150 g (3/4 cup) granulated sugar
50 g (1/4 cup) brown sugar
1 egg
80 g (1/4 cup) molasses
4 teaspoons grated orange zest (from 1 large orange)
1 tablespoon freshly grated gingerroot
240 g (2 cups) all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
55 g (1/4 cup) crystallized ginger, roughly chopped

Instructions

Cream Butter & Sugar

Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.

2. Add Wet Ingredients

Mix in egg until combined.

Stir in molasses, orange zest, and fresh grated ginger.

3. Combine Dry Ingredients

In a separate bowl, whisk together flour, baking soda, cinnamon, cloves, and salt.

4. Make the Dough

Gradually mix dry ingredients into wet ingredients until just combined.

Fold in chopped crystallized ginger.

5. Shape & Bake

Roll dough into 1–1½ inch balls and place on prepared baking sheets.

Slightly flatten each ball.

Bake for 10–12 minutes, until edges are set but centers remain soft.

6. Cool

Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
