  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 ripe bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk
  • 8 tbsp butter (for toffee sauce)
  • ¾ cup brown sugar (packed, for toffee sauce)
  • ¾ cup heavy cream (for toffee sauce)
  • 1 tsp vanilla extract (for toffee sauce)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, cream together the granulated sugar, brown sugar, and butter until fluffy. Mix in the eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet mixture; mix until just combined.
  5. Pour batter into the baking dish and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean.
  6. While baking, prepare the toffee sauce by melting butter and brown sugar together; stir in heavy cream and cook until thickened.
  7. Once baked, poke holes in the cake and drizzle with cooled toffee sauce; let soak for at least an hour before serving.
