  • 1 tbsp instant dry yeast
  • 4 ¼ cups all-purpose flour
  • ⅓ cup granulated sugar (for dough)
  • 1 tsp salt
  • 1 large egg (room temperature)
  • ⅓ cup unsalted butter (softened)
  • 1 ¾ cups fresh or frozen strawberries
  • ¼ cup granulated sugar (for filling)
  • Juice of half a lemon
  • ½ cup cream cheese (softened)
  • ⅓ cup unsalted butter (softened for glaze)
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp strawberry puree

Instructions

  1. Prepare the strawberry filling by cooking strawberries with lemon juice and sugar over medium heat until thick. Blend until smooth and cool.
  2. In a stand mixer, combine flour, sugar, salt, and yeast. Add warm milk, softened butter, and egg. Knead on medium speed until smooth and elastic.
  3. Let the dough rise covered in a warm place for about two hours or until doubled in size.
  4. Roll out the risen dough into a rectangle, spread cooled strawberry filling, roll tightly, and slice into twelve pieces.
  5. Place rolls in a greased baking dish and let rise again for about an hour.
  6. Bake at 350°F for 20–25 minutes until golden brown.
  7. Prepare the glaze by mixing cream cheese, softened butter, powdered sugar, vanilla extract, and cold strawberry puree until smooth.
  8. Spread the glaze over slightly warm rolls before serving.
