  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat your oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. In a bowl, mix crushed graham crackers with melted butter and press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree until fully combined.
  4. Pour this cheesecake mixture over the crust and bake: For mini muffin tins: 20–25 minutes; For an 8×8-inch pan: 35–40 minutes.
  5. Allow to cool before refrigerating for at least four hours.
  6. For the topping, mix crushed Oreos with freeze-dried strawberries and melted butter; sprinkle over chilled cheesecake bites.
