  • ¼ cup melted coconut oil
  • ¼ cup cane sugar
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound diced strawberries
  • 2 tablespoons cane sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 ½ cups rolled oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine melted coconut oil and cane sugar. Add the egg and mix until well incorporated.
  3. Gradually stir in both flours, cinnamon, and salt until just combined.
  4. In another bowl, combine diced strawberries, additional cane sugar, and lemon juice; let sit for about 10 minutes.
  5. Grease your baking dish with coconut oil and spread half of the base mixture evenly across the bottom.
  6. Layer the strawberry filling over the base and crumble the remaining base mixture on top.
  7. Bake for about 45 minutes or until golden brown on top.
  8. Allow cooling in the pan for at least 20 minutes before slicing into bars.
