  • 1 ½ cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • ½ cup light brown sugar
  • ½ cup unsalted butter (cold and cubed)
  • Honey or maple syrup for added sweetness (optional)
  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (to thicken)
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional but recommended)

Instructions

  1. Prepare the strawberry filling by cooking chopped strawberries with sugar, lemon juice, cornstarch, and vanilla in a saucepan until thickened.
  2. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  3. In a mixing bowl, combine oats, flour, brown sugar, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
  4. Press two-thirds of the mixture into the pan as the base. Spoon cooled strawberry filling over it and top with remaining crumble mixture.
  5. Bake for 35-40 minutes until golden brown. Allow to cool before slicing.
