  • 1 quart (16 ounces) ripe strawberries, washed, hulled, and sliced
  • 1 tablespoon lemon juice
  • to ½ cup (70 – 100 grams) sugar
  • 1 tablespoon quick-cooking tapioca or cornstarch
  • Pinch salt

Instructions

  1. Blend half of the sliced strawberries with lemon juice until smooth.
  2. In a pot, combine sugar, tapioca (or cornstarch), and salt. Add the blended strawberry mixture and cook over medium heat until boiling.
  3. Lower heat to simmer for about 5 minutes until thickened. If using cornstarch, skip simmering after boiling.
  4. Stir in the remaining sliced strawberries and return to a simmer before transferring to a wide container for cooling.
