  • 2 cups all-purpose flour (plus more for rolling)
  • 1 teaspoon coarse salt
  • 1 teaspoon granulated sugar
  • 1 cup unsalted butter (cold and cut into cubes)
  • 4-5 tablespoons cold water
  • 1 cup strawberry preserves (homemade or store-bought)
  • Rainbow sprinkles (optional)
  • 1 cup powdered sugar
  • 1-2 tablespoons heavy cream or milk

Instructions

  1. Prepare the filling by mixing sliced strawberries, lemon juice, lemon zest, sugar, and vanilla extract. Let sit for 10-15 minutes.
  2. Make the pastry dough by combining flour, salt, and sugar; blend in cold butter until crumbly. Add cold water gradually until dough forms. Chill for at least 30 minutes.
  3. Roll out the dough and cut into rectangles. Place a tablespoon of filling on half of them, cover with another rectangle, seal edges, and crimp with a fork.
  4. Bake on a parchment-lined sheet at 375°F (190°C) for 25-30 minutes until golden brown.
  5. Make icing by whisking powdered sugar with heavy cream until smooth; drizzle over cooled pop tarts and add sprinkles if desired.
