  • 1 cup unsalted butter (room temperature)
  • 3 cups granulated sugar
  • 5 large eggs (room temperature)
  • 3 cups all-purpose flour (sifted)
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tsp strawberry extract (optional)
  • 1/2 tsp red food coloring (optional)
  • 2 tbsp strawberry puree (reserved from the cake)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for glaze)
  • 1 tsp pure lemon juice or lime juice

Instructions

  1. Preheat oven to 325°F (165°C) and grease a loaf pan.
  2. Wash and chop strawberries; set aside some for the glaze.
  3. Cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix dry ingredients (flour, salt, baking soda) separately; alternate adding them with buttermilk to the wet mixture.
  6. Fold in chopped strawberries, vanilla extract, and optional color.
  7. Pour batter into the loaf pan and bake for about 70 minutes or until a toothpick comes out clean.
  8. For the glaze, combine reserved strawberry puree with powdered sugar and lemon juice; drizzle over cooled cake.
