  • ½ cup water
  • ¾ cup granulated sugar (divided)
  • 4 tablespoons lemon juice
  • 1 ½ cups heavy cream
  • 16 oz mascarpone cheese
  • 2 teaspoons vanilla extract
  • Ladyfingers (approximately 260 grams)
  • Freeze-dried strawberries (for dusting)

Instructions

  1. Prepare the strawberry syrup by cooking strawberries with water, mashing them, straining the juice, and simmering it with sugar and lemon juice until thickened.
  2. In a bowl, whisk together mascarpone cheese, sugar, and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks and gently fold it into the mascarpone mixture along with cooled strawberry syrup.
  3. Assemble by dipping ladyfingers briefly in the remaining syrup and layering them with the mascarpone filling in a serving dish. Chill for at least six hours or overnight.
  4. Before serving, dust with freeze-dried strawberry powder and garnish with sliced strawberries.
