  • 1/2 cup unsalted butter, softened

  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Prepare the sweet potato by piercing it with a fork and microwaving for 5–7 minutes or roasting at 400°F for 45–60 minutes until tender. Allow to cool before mashing.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Mix in the egg, vanilla extract, and mashed sweet potato until well combined.
  3. In another bowl, whisk together the flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Drop rounded tablespoons of dough onto parchment-lined baking sheets.
  6. Preheat the oven to 350°F and bake cookies for 10–12 minutes until edges are golden.
  7. Allow cookies to cool on the pan for about 5 minutes before transferring to a wire rack.
