  • 1 cup jasmine rice (or basmati)

Instructions

  1. Marinate the Chicken: In a large bowl, mix honey, lime juice, lime zest, minced garlic, cumin, salt, and pepper. Add chicken breasts and coat thoroughly. Cover and marinate for at least 30 minutes.
  2. Cook the Rice: In a saucepan, bring chicken broth to a boil. Stir in jasmine rice, reduce heat to low, cover, and simmer for about 15-20 minutes until fluffy.
  3. Grill the Chicken: Preheat grill pan or outdoor grill to medium-high heat. Remove chicken from marinade and grill for approximately 6-7 minutes per side until fully cooked.
