  • 1/2 cup unsweetened applesauce

  • 1/2 teaspoon vanilla essence
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: coarse sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin.
  2. In a mixing bowl, whisk together milk, eggs, maple syrup, and applesauce until well combined.
  3. In another bowl, mix oats, baking powder, cinnamon, nutmeg, vanilla essence, and salt.
  4. Combine the wet mixture into the dry ingredients and fold in chopped apples.
  5. Spoon the mixture into muffin cups until three-quarters full; sprinkle with coarse sugar if desired.
  6. Bake for about 28 minutes or until golden brown.
  7. Allow to cool before serving.
