  • 1/4 cup all-purpose flour
  • 4 cups chicken broth (low sodium)
  • 2 cups half-and-half (or dairy-free substitute)
  • 1-2 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried Italian herb blend
  • 1 pound gnocchi
  • 2 cups cooked rotisserie chicken breast, shredded or cubed
  • 2 cups fresh spinach, roughly chopped
  • 1/8 teaspoon freshly grated nutmeg (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot, melt butter and olive oil over medium heat. Add onions, carrots, and celery; sauté until soft (about 5 minutes). Stir in minced garlic and cook for another minute.
  2. Deglaze the pot with apple vinegar, then sprinkle in flour while stirring continuously. Gradually pour in chicken broth, mixing well.
  3. Stir in half-and-half and bring to a simmer.
  4. Add gnocchi and shredded rotisserie chicken; cook until gnocchi float according to package instructions.
  5. Incorporate chopped spinach and thyme; season with salt, pepper, and optional nutmeg. Simmer for a few more minutes until spinach wilts.
