  • 7 tbsp unsalted butter (room temperature)
  • 2 tsp salt
  • 1/2 cup + 1 tsp cold water
  • 1 cup + 2 tbsp cold unsalted butter (for lamination)
  • 1 egg (for egg wash)
  • 1 egg yolk (for egg wash)

Instructions

  1. In a large bowl, mix flour, sugar, yeast, milk, softened butter, and salt. Gradually add cold water and knead until smooth.
  2. Shape into a rectangle, wrap in plastic wrap, and refrigerate overnight.
  3. Prepare the butter block by pounding cold butter between parchment paper into a rectangle. Freeze it along with the dough for 20 minutes.
  4. Roll out the dough, encase the butter slab inside, and fold to create layers.
  5. Rest the dough as needed between folds to maintain flakiness.
  6. Roll out into larger rectangles and cut into triangles to shape croissants.
  7. Proof croissants at a warm temperature for about two hours before baking at 375°F for 16-20 minutes until golden brown.
