  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp butter (melted)
  • 2 (8 oz) pkgs cream cheese (softened)
  • ½ cup granulated sugar
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 eggs (room temperature)
  • 1 ½ cups fresh strawberries (chopped)
  • 5 tbsp sugar
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 2 tsp cornstarch
  • ½ cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F. Line an 8×8 or 9×9 inch pan with parchment paper and lightly spray it with baking spray.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press this mixture firmly into the bottom of the prepared pan.
  3. In a large bowl, beat softened cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time, mixing on low speed until just combined.
  4. Pour the cream cheese mixture over the crust and bake for 25-35 minutes until the center is set but still slightly jiggly. Let cool on a wire rack before refrigerating for at least 3-4 hours.
  5. For the strawberry topping, combine chopped strawberries, sugar, water, lemon juice, cornstarch in a saucepan over medium heat until bubbling and thickened. Pour over cooled cheesecake bars before serving.
