  • 32 oz full-fat cream cheese
  • 325g granulated sugar
  • ½ tsp salt
  • 1 tsp vanilla essence
  • 4 large eggs
  • 120g heavy cream
  • 240g sour cream
  • 1 tbsp cornstarch
  • 1 lb strawberries
  • Juice of 23 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham crackers, sugar, and melted butter in a bowl; press into a springform pan and bake for 10 minutes.
  3. Beat cream cheese until smooth; add sugar, salt, vanilla essence, then mix in eggs one at a time.
  4. Stir in heavy cream, sour cream, and cornstarch until combined; pour over crust.
  5. Bake for 60–70 minutes or until slightly jiggly in the center; turn off the oven and cool inside for an hour.
  6. For the compote, cook strawberries with sugar and lemon juice until thickened; cool before topping cheesecake.
