Bright, tangy, and slightly spicy, this Turkish-style onion salad combines thinly sliced red onions with lemon, olive oil, fresh parsley, and aromatic sumac. It’s a vibrant condiment that adds freshness and depth to grilled meats, wraps, and mezze platters.

For the Salad:
3 medium red onions, thinly sliced
1 tablespoon sumac powder
2 tablespoons fresh lemon juice
1/4 cup fresh parsley, finely chopped
1/2 teaspoon red chili flakes
1/2 teaspoon salt, or to taste
2 tablespoons extra virgin olive oil

Instructions

  • Peel the onions, cut them in half, and slice thinly using a sharp knife or mandoline. Transfer to a large bowl. For a milder flavor, soak the sliced onions in water for about 20 minutes, then drain well.
  • Add the chopped parsley to the bowl with the onions.
  • Sprinkle in the sumac, salt, and chili flakes. Drizzle with lemon juice and olive oil.
  • Toss thoroughly until everything is evenly coated.
  • Taste and adjust seasoning with more salt or lemon juice if needed.
  • Serve immediately, or let the mixture marinate for at least 30 minutes to deepen the flavors before serving.
