  • 2 boneless, skinless chicken breasts
  • 2 cups mixed greens (arugula, spinach, or romaine)
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced thin
  • 1 small red onion, sliced thin
  • ½ cup plain Greek yogurt
  • 1 clove garlic, minced
  • ½ cucumber, grated and squeezed to remove excess moisture
  • 1 tbsp lemon juice
  • Salt & pepper to taste
  • 2 tbsp roasted tomato puree or paste
  • 1 tbsp chopped fresh basil
  • 1 tsp olive oil
  • ¼ cup crumbled feta cheese (optional)
  • 2 tbsp chopped fresh dill
  • 1 tbsp olive oil for grilling chicken

Instructions

  1. 1. Grill the seasoned chicken for 5–6 minutes per side until cooked through. Let it rest before slicing.
  2. 2. Prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, grated cucumber, lemon juice, salt, and pepper in a bowl.
  3. 3. In another bowl, combine Greek yogurt with roasted tomato puree, chopped basil, olive oil, salt, and pepper for the roasted tomato-basil sauce.
  4. 4. Assemble by layering mixed greens on a plate and topping them with sliced chicken, cherry tomatoes, cucumber slices, red onion rings, crumbled feta cheese (optional), and drizzle with both sauces.
