  • 2 tablespoons extra virgin olive oil
  • 4 medium carrots, peeled and sliced
  • 3 parsnips, peeled and sliced
  • 3 celery ribs, sliced
  • ½ medium onion, diced
  • 1 leek, halved lengthwise and sliced
  • 4 garlic cloves, minced
  • 2 boneless skinless chicken breasts
  • 5 cups low-sodium chicken broth
  • Fresh herbs: thyme, tarragon, bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté the carrots, parsnips, celery, leek, onion in olive oil for 4-5 minutes. Add garlic, salt, and pepper; cook for another minute.
  2. Add thyme, tarragon, bay leaf, chicken breasts, and broth to the pot. Bring to a boil then reduce heat to low. Cover and simmer for about 15 minutes until chicken is cooked through.
  3. Remove chicken from the pot; shred with forks and return it to the soup. Simmer for an additional 1-2 minutes.
  4. Remove herbs from the soup. Stir in chopped parsley before serving hot.
