  • 1/4 cup oat flour
  • 1/4 tsp salt
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, oat flour, and salt. Combine with melted coconut oil, maple syrup, and vanilla extract until smooth.
  3. Press the mixture into a greased 8×8 baking dish as the base layer.
  4. In a pot, heat berries with maple syrup and water until softened. Mash the mixture and stir in cornstarch; let cool in the fridge.
  5. For the crumble topping, combine oats, oat flour, almond flour, salt, melted coconut oil, maple syrup, and vanilla until crumbly.
  6. Spread berry mixture over the base layer and top with crumble before baking for 25 minutes.
  7. Allow cooling completely before cutting into squares.
