  • 3 garlic cloves (minced)

  • 2 medium carrots (diced)
  • 2 pounds potatoes (chopped)
  • 4 cups vegetable broth (or water)
  • 1/3 cup dairy-free cream
  • Fresh parsley (for garnish)
